Calla's Clean Eats

  I found this website, that gives great recipes. It makes it so great, because it offers many desserts that are healthy. Of course, that's what I've been looking for, because I love sweets. Calla's Clean Eats, is the place to visit and I'm sure you will find many recipes, that suit your taste buds.  It will be helpful, to your health and form good choices, when trying to lose weight. Creamy Avocado Pasta



  1. INGREDIENTS

    1. 8 oz. uncooked pasta (I used spaghetti)
    2. 1 ripe avocado, just the flesh
    3. 1/3 cup fresh basil leaves
    4. 1 small garlic clove
    5. Juice from half a lemon (1 tablespoon)
    6. 1 tablespoon olive oil
    7. 1/4 teaspoon sea salt
    8. 1 cup cherry tomatoes (optional)

DIRECTIONS

  1. Cook the pasta as directed on the package.
  2. While the pasta is cooking, add the avocado, basil, garlic clove, lemon juice, olive oil, and salt to a food processor. Blend until a smooth, creamy sauce forms.
  3. Drain the pasta throroughly and transfer to a large glass or ceramic bowl. Add the tomatoes now if you're using them.
  4. Pour on the avocado basil sauce and stir until well combined. Enjoy!

Sage?

How many of you have noticed the shortage of "sage" at the local grocery stores?  It was the same last year around this holiday, and now I find it missing on the shelves again this year.  What are we to use for seasoning in our dressing/stuffing?  Thanksgiving is the one holiday that we use plenty of sage.  I inquired about it and the clerk told me that when she ordered, there was none in the warehouse.  WTF is going on?  I suppose that I will have to go and buy a flowering sage bush at my local home and garden store, plant it and grow my own.  That way, if it don't die I will have plenty of fresh sage each year.

Shrimp Spread

1 (8oz) pkg. cream cheese soften
1 (4oz) can shrimp, drained & chopped
6 olives chopped
2 T fine onion chopped
2 T mayo
1 t lemon juice
1/4 t  Worcestershire sauce
1/4 t hot sauce
1/4 t garlic powder

Combine all ingreds. spread on bread or crackers for that summer outing.

Post Holidays?

It's the time for your diets and here comes Valentines, right?  Say, how was your holiday's?  Mine was full of food and snacks, not to mention the celebrating with wine and spirits.  Now, how the hell are we supposed to get rid of all those calories, that's already been consumed?  Oh hell, you know!  It's not funny either, when you diet and exercise.
Me, well that's another story, and I just maintain!  I'm not going to kill myself dieting, when I know that I won't last over a week, and then start right back eating the good food again.  I say, good, when it's really bad for me, but it tastes damn good!  How about you guys?

Price of Groceries?

Have you seen the price's of different grocery items, lately?  It seems to be a never ending battle, when going to the grocery store.  I've gotten smart enough to shop at more than one store, for items I know are cheaper to buy.  Aldi, gives certain food products for good prices but limit the types you can get.  So, for specialty items that can only be gotten at the other stores, I have to go there and pay higher prices to get what I want.  Walmart, gives all the different items I need, but at higher prices.  So, I have to divide up the shopping list and make sure to get what I need from each separate store for the quality and price I can afford.  I rarely find the same items at one store for what I need.

Turkey

 
Well, it's out of the freezer and sitting in the roasting pan for awhile, until I get a chance to unwrap the bird.  Right now, it will sit there and stare me down until I get off my butt and get the work done........actually, I will put it in the fridge for the next two days to thaw and then the big day arrives to cook this bird!

In many homes this particular pan is used only on holidays.  The roasting pan can be used to bake a turkey, duck, or ham.


 
The size is perfect for a good size ham, turkey, or duck and this gives you space to catch all the drippings for making your gravy later.  I'll show you more pictures of what I'll be doing this week of "Thanksgiving".

It's time to put the big bird in the oven and get ready for some good eating!  I'm ready for some turkey and dressing with sweet potatoes and mashed potatoes.....that's just part of what my stomach will be feasting on during the hours after the cooking!  From our house to your........have a safe, happy Thanksgiving!

Salmon Patties

INGREDIENTS: 1 large egg 2½ tablespoons mayonnaise (I like Hellman’s Real) 1½ teaspoons Dijon mustard (I like Maille brand) 1 teaspoon Worcestershire sauce 1 teaspoon Old Bay seasoning ¼ teaspoon salt ¼ cup finely diced celery (you’ll need one stalk) 2 tablespoons finely chopped fresh parsley 1 pound lump salmon meat* ½ cup panko (I like the Whole Foods 365 brand for this recipe) Canola oil DIRECTIONS: 1. Line a baking sheet with aluminum foil. 2. Combine the egg, mayonnaise, Dijon mustard, Worcestershire, Old Bay, salt, celery, and parsley in a large bowl and mix well. Add the salmon meat (be sure to check the meat for any hard and sharp cartilage) and panko; gently fold mixture together until combined. Shape into 6 salmon cakes (about ½ cup each) and place on prepared baking sheet. Cover and refrigerate for at least 1 hour. 3. Preheat a large nonstick pan to medium heat and coat with canola oil. When oil is hot, place salmon cakes in pan and cook until golden brown, about 3-5 minutes per side. Be careful as oil may splatter. Serve immediately with tartar sauce or a squeeze of lemon.

Quick Tartar Sauce

I love tartar sauce with my fish..........in fact I like a little fish with my tartar sauce....... :) Ingredients: 1 cup mayonnaise 1½ tablespoons sweet pickle relish 1 teaspoon Dijon mustard 1 tablespoon minced red onion 1-2 tablespoons lemon juice, to taste Salt and freshly ground black pepper, to taste Directions: Mix all ingredients together in a small bowl. Cover and chill until ready to serve.

Boston Cream Pie

Well, I broke down and started making a Boston Cream Pie, like my man likes. It's taking some time but nothing is really good, if you don't spend some time on it. I will get some pics of it, once I'm finished. The cake is done and cooling and so is the cream filling. Now, just have to wait till the filling chills some more, then I will make the cake/pie........:)
It got a bit messy, cause the cream was squishing out when I put the top cake layer on, and then the icing was running somewhat, because I warmed it just a little in the microwave to help it pour over the cake.  Anyway, finished product.......... :)
